Sourdough Starter seems to be working!

9am to 2pm Dang it flew up!

I took 1/2 Cup of that starter above and made Sourdough Biscuits. They are still rising in my cast iron pan, inverted lid of my Dutch oven cast iron outdoor cooking pot.

Yesterday I set some starter up from one of my small jars, trying to push different methods for something that WORKS.

Things were looking fine and dandy for it yesterday, so I put together Soft White Sourdough Bread recipe, and let it ferment & rise overnight, shaped and rose and baked this morning.

White Spelt Sourdough Bread. I’m at fault for the poor shaping. The other side blew out all down the side, but it’s OK once cut. A few areas with bigger holes and folds that didn’t meld, but overall a lot of good sandwich pieces.

My daughter and I each ate one end piece. Heavenly.

So the little starter jar was based on the bigger jar from the day before yesterday.

The little one rose well yesterday, just not total doubled, it worked to make a lovely loaf of white bread anyway.

The future is looking bright. I’ll make a Honey Spelt Loaf next time, half whole grain and half white unbleached.
