I finally determined it was literally just because I had been stirring my starter together with a SS spoon. Often and usually before it was with a spatula or stirrer made of silicon.
Continual spoon use causes it to become to acidic. I had a long row to hoe getting it back into business, then this morning I suddenly realized I was using a SS spoon again, without thinking about it. I am guessing I did a time or two before that, and also let my starter sit for a couple of days with no attention on the counter.
I had only KA unbleached Bread Flour in my starter for several weeks. I had been putting a little spelt in it but my supply ran out from the freezer.
So anyhow, I was going to make two starters, one with a little starter and just the freshly ground organic spelt I had just finished grinding, and one with more of the original starter and adding a little of the spelt and more of the KA unbleached bread flour.

I know I need more whole grain than unbleached bread flour in my bread. I have my husband tasked to get me a bucket (42lbs) Organic Red Hard Wheat (spring) from Bread Beckers sooner than later. Buying it from Amazon would mean I could get only 25 pounds for the same price. $63.68
My usual bread loaf has 500g flour and I was doing 100g organic whole grain spelt flour, and 400g KA organic unbleached Bread Flour.
I am very low on Spelt grain. I don’t know if hubby can also get spelt there at Bread Beckers, I got a 25lb organic spelt grain on Amazon in May 2024 for $56.60, current price is $74.99 to buy or $64.49 to subscribe & save.
Bread Beckers has organic spelt grain 42lb bucket for 94.23 — which is cheaper, and in a bucket, which I like more, and can, in the past at least, get a seal and lid that screws on with it for extra $ but that is valuable and you can go back later with the empty bucket and have it refilled, or use it for something else and have a very good bucket and lid. At any rate Bread Becker prices are the best and something that isn’t too far from where we live.
But that is very much, I mean spelt, that much would last for years. But cost with lid and seal and tax OVER $100. It is a very nice Ancient Grain. The other one I get and use sometime to make my own pasta is KAMUT. That is currently $87.67 for a 42lb Organic Kamut bucket at Bread Beckers. I also use it for waffles. Kamut ground and yogurt equal amounts stirred together and covered for 12 to 24 hours then put the rest of the ingredients in and make your waffles! The best waffles on earth. Perfect in color taste and texture. 100% whole grain.
