I used 4 eggs, hard boiled, peeled, then cut with my handy dandy egg slicer.
Into that I added 1 1/2 tsps. of Dijon Mustard, a couple Tablespoons of very finely diced Onion, and then a 1/4 cup of my homemade mayo (that stuff is soooo good,) salt and pepper to taste, plus a tiny splash of Apple Cider Vinegar.
Small portion served on a plate with some paprika on top.
More for the rest of the week, breakfast, lunch, or dinner.
